A lot of people who pirate either don't want to spend the money on it (for various reasons, such as economic status, ect) or want to try the game before they buy it. With a demo, you can appeal to both of these demographics and allow people to decide if they'd like to spend money on something they've actually experienced and played first hand or if they don't want to. For example, I don't want to spend £60 on a AAA game I've never tried only to hate it after 2 hours and not be able to refund it. So, I pirate it instead and, usually out of laziness, can't be arsed buying it since I've already got the full game.
